Cut the halloumi into 2 cm cubes. Put the halloumi, peppers and tomatoes into a large bowl.<\/p>\n\n\n\n<p><br>2 Use a speed peeler to peel the courgettes into in long ribbons, then add to the bowl.<\/p>\n\n\n\n<p><br>3 Pick and finely chop the mint leaves discard the stalks. Deseed and finely chop the chilli. <\/p>\n\n\n\n<p><br>4 Add both to the bowl then finely grate in the zest of the lemon. Add the olive oil and season with alt and pepper. Save the remaining eggplant for another dish. Place the sliced eggplant in a shallow dish.<\/p>\n\n\n\n<p>2 Whisk the olive oil, balsamic vinegar, italian seasoning, salt and pepper together. When adding salt, keep in mind that  the halloumi is already salty cheese.<\/p>\n\n\n\n<p>3 Pick and finely chop the mint leaves discard the stalks. Deseed and finely chop the chilli. <\/p>\n\n\n\n<p>4 Add both to the bowl then finely grate in the zest of the lemon. Add the olive oil and season with alt and pepper. Mix well to coat<\/p>\n\n\n\n<p>5 If using a griddle pan, put it on a high heat now to get screaming hot.<\/p>\n\n\n\n<p>6 When the grill is hot, arrange the eggplant slices on the grill, and cookfor about 6 minutes on each side or till the eggplant is cooked.<\/p>\n\n\n\n<p>7 Then grill the halloumi slices on both sides till golden grill marks appera, about 2 minutes per side.<\/p>\n\n\n\n<p>8 If you don&#8217;t have a grill, you can cook the eggplant and halloumi batches on large skillet<\/p>\n\n\n\n<p>9 You are now ready to assemble the burgers<\/p>\n\n\n\n<p>10 Spread some mayonnaise, if using, on 2 halves of a burger bun. Take one half of a bun, and stack the grilled eggplant, halloumi and spread 1 teaspoon of pesto.
